Mung bean sprouts

Mung bean sprouts, a ubiquitous ingredient in Asian cuisine, are an easily digestable high protein source. They are usually stir-fried along with other vegetables or added into dishes raw. In Korea, slightly cooked mung bean sprouts are often served as a side dish. They are germinated by leaving them watered with four hours of daytime light and spending the rest of the time in the dark.
