Dijon Mustard

Mustard is made from the whole, ground, or cracked mustard seeds (from the mustard plant) which are mixed with water, salt, lemon juice, and sometimes other flavorings and spices to ultimately create a paste or sauce. Depending on the other ingredients, the color of mustard can range from bright yellow to dark brown. Mustards from Dijon today generally contain both white wine and red wine. Mustards marketed as Dijon style may contain one or both of these wines or may substitute vinegar or another acid to recreate a similar flavor.
