Brown Rice

Brown rice (or hulled rice) is unmilled or partly-milled rice, a kind of whole, natural grain. It has a mild nutty flavor, is chewier and more nutritious than white rice, but goes rancid more quickly because the germ contains fats that can go bad. During the milling process, essential nutrients are removed with the bran which also has antioxidants. However, enriched rice takes back some of the missing nutrients, such as vitamins B1, B3, and iron.
