Kamut
Khorasan wheat is an ancient grain type. This grain is two times larger than modern-day wheat and is known for its rich nutty flavor. Kamut, which comes from the ancient Egyptian word for “wheat”, is the product name for this wheat variety.
Kamut has 30-40% more protein than regular wheat. It also contains high levels of selenium, zinc, and magnesium. Kamut is considered a high energy wheat, and provides the body with more energy in the form of complex carbohydrates. Even though Kamut contains gluten, it has been found to be more easily digestible by people who may have slight allergic tendencies.
Some people who have wheat allergy are able to eat some forms of Kamut. However, as a wheat species, it is definitely unsuitable for those with celiac disease.
Kamut can be found in products such as breads, breakfast cereals, pastas, a grain extract drink, beer, cookies, and crackers. The grain kernels can be milled into flour. The actual wheat grains can be soaked and used in salads. Even the wheatgrass can be harvested to be an ingredient in many different supplements.
Soak Kamut in water overnight and then cook just like pasta. For 1 cup of Kamut, boil 3 cups of water with a pinch of salt, add the soaked Kamut to it, cover the pot and reduce heat to simmer. Cook for 30-40 minutes until it has a chewy texture. Drain any excess water. Soaked Kamut can also be cooked in the rice cooker with double the amount of water.
