Sorghum
Sorghum is a tropical cereal grass, which originated in Africa that can grow up to 3 ft in height. Sorghum has waxy leaves and can withstand very dry temperatures. It is the nutritious cereal which is generally red or pale yellow in color. Sorghum is the fifth major cereal crop in the world, after wheat, barley and rice, and is mainly grown in Africa and Asia. It is also planted in the USA.
Traditionally sorghum is fermented and used to make porridge, but is also used to make whole grain rice products, pancakes, dumplings, and couscous. It is also made into syrup. In Arab cuisine, the unmilled grain is often cooked to make couscous, porridges, soups, and cakes. Many poor use it, along with other flours or starches, to make bread.
Sorghum makes a healthy diet since it is gluten-free. It is good in treatment of celiac disease and wheat allergies. It keeps bones and teeth healthy giving energy to the body. It also maintains the health of heart, controls diabetes, arthritis and weight of the body.
Sorghum is available year round in health food stores and select grocery stores. Sorghum flour is great for making pancakes and bread. It can even be popped in a hot pan to produce a delicious popcorn like snack.
