Wild rice

Wild rice, is actually not a rice, but an aquatic grass. Also called Canada rice, Indian rice, and water oat, it is a grain that is extremely high in fiber and protein, especially the amino acid lysine. Like true rice, it does not contain gluten. It is also a good source of certain minerals and B vitamins. The grain has been historically gathered in the cold lakes and streams around the Great Lakes region of North America.
