Thyme
One of the classic French herbs, thyme is a common component of herbes de Provence and bouquet garni,a bundle of herbs tied together with a string used to flavor long-simmering dishes.Thyme has a slightly earthy,minty,lemony flavor that’s perfect for flavoring soups, stews and meat. This woody, grayish-green herb pairs particularly well with lamb, eggs and tomato.
You can find both fresh and dried thyme at just about any major grocery store. Fresh thyme is more powerful, but the dried version substitutes wonderfully is most recipes. Fresh thyme rarely lasts more than a week, so it’s good to keep dried on-hand. When purchasing fresh thyme, look for fresh, vibrant leaves that are free from dark spots or yellowing.
Fresh thyme is either used as a whole sprig, similar to the way you would use bay leaves, or the leaves are separated from the stem. To separate the leaves, hold the stem firmly at one end, then run your fingers down the stem, striping off the leaves as you go.
Fresh thyme is pungent, so be careful when cooking with it. Add the herb to slow-cooking dishes, or start your meal by sautéing it in a bit of olive oil along with garlic and onions.
