Pine Nuts
Pine nuts are most commonly used to make traditional basil pesto, but they’ve got a whole slew of other uses. You can use pine nuts to add flavor to cookies, breads, and other baked dishes. They’re perfect for adding a nutty crunch to meat, fish and vegetable dishes and are ideal for sprinkling on top of salads. In parts of Spain and the U.S., pine nuts are actually used to make a flavorful, dark roast coffee.
Pine nuts are the edible seeds of pine trees. They tend to be more expensive than other nuts because of the difficult harvesting process. The pine cones must be collected from the forest and then heated to open up the scales and release the nuts.
Pine nuts are available year-round, most often removed from their shells. Since these delicate nuts can spoil quickly, they are often frozen to preserve their flavor. They’re commonly roasted to improve the flavor before they make it to stores.
You can toast the nuts at home to improve the flavor even more and give them a wonderfully crunchy texture. Toss the nuts into a dry skillet over medium-low heat. Monitor the skillet closely, shaking it regularly to produce even browning. Remove the nuts from heat when they are nicely browned and fragrant.
Pine nuts are nature's only source of pinoleic acid, which can help diminish your appetite. They also have the highest concentration of oleic acid, a monounsaturated fat that aids the liver and helps protect our heart. Pine nuts are a great source of magnesium, which can help alleviate muscle cramps, tension and fatigue.
