Chipotle

A chipotle or chilpotle, which comes from the Aztec word chilpoktli meaning "smoked chili pepper" is a smoke-dried jalapeño. It has a hot and smoky flavor and is used primarily in Mexican and Southwestern dishes. It can be used in spice rubs, salad dressings, sauces and dips. Most chipotle chiles are produced in the northern Mexican state of Chihuahua. This variety of chipotle is known as a morita.
