Mace

Mace is the bright "lacy" reddish covering or aril of the nutmeg seed. When fresh, it has bright red color, which changes to a golden brown when it is dried. Its flavor has been described as a combination of: cinnamon and pepper or nutmeg and cinnamon. Typically sold ground; and when sold whole, it's called a "blade." Nutmeg and Mace have similar sensory qualities, with nutmeg having a slightly sweeter and mace a more delicate flavor.
