Saffron is by far the most expensive spice in the entire world. The spice is actually the stigmas of the saffron crocus flower. There are only three stigmas, called saffron threads, per flower and each one must be individually harvested by hand. It requires over 13,000 threads just to produce a single ounce of saffron. This reddish spice is used to add color and flavor to a variety of dishes, like Spanish paella or Milanese risotto.
