Chayote Squash

Chayote is a vine originally from Mesoamerica, but has since been introduced as a crop worldwide. The word "chayote" is Spanish; it was one of the many foods introduced to Europe by early explorers. The Age of Conquest spread the plant south from Mexico, ultimately allowing it to be integrated into the cuisine of many other Latin American nations.
