Chicory

Sometimes called the endive, chicory is most commonly used as a salad green. This leafy vegetable comes in a variety of colors, from green chicory, to the pale yellow Belgain endive, to the bright red and white radicchio. Chicory is made up of a white bulb surrounded by overlapping leaves. There are more than a few ways to prepare this versatile leafy vegetable. Peel the leaves and eat them raw in salad drizzled lightly with a simple vinaigrette. Or, sauté the leaves with a bit of oil, salt and pepper.
