Are you looking for the perfect lettuce to accompany your sandwich, burger or taco? Well then look no further than the American favorite, iceberg. Iceberg lettuce has an exceedingly mild flavor with a refreshing, crunchy texture, making it ideal to offset more flavorful ingredients.
Iceberg lettuce is technically a variety of crisphead lettuce. Crispheads are characteristically large, heavy, tightly-packed heads of pale green leaves, with a similar appearance to a head of cabbage.
Iceberg lettuce owes its crunchy texture to its higher water content, making it essentially nutritionally vacant. In fact, romaine and loose-leaf lettuce contain up to six times more vitamin C and up to ten times more vitamin A than iceberg. However, the darker green outer leaves of iceberg are more nutritious than the light and white ones inner ones.
Mix iceberg together with more flavorful greens and vegetables to give salads that familiar, crunchy texture without resulting in a bland, boring salad. To prepare iceberg, slice the head in half and remove the core and any wilted outer leaves. Rinse both halves under cold, running tap water, then chop it up any way you see fit. If your lettuce is beginning to wilt, submerge it in ice water for five minutes or so until they become crisp and fresh again.
Select heads of iceberg that are firm, fresh and heavy for their size. Avoid any heads with dark spots, slime, wilting and any other signs of decay.
