Japanese Eggplant

Eggplant, or aubergine as it is called in France, is a member of the nightshade family and is native to India. The early varieties were bitter, but cultivation and crossbreeding have greatly improved the flavor. Eggplant is related to potatoes, tomatoes, and peppers. Japanese Eggplant is distinguishable by its long, narrow shape and deep purple color. Chinese eggplant has the same shape but is white in color.
