Red Russian Kale

Originally from Siberia, Red Russian kale was introduced into Canada and then into the U.S. by Russian traders in the 19th century. Red Russian Kale is thick, chewy and juicy. Its purple blushed and tipped gray-green leaves are lobed like an oak leaf with ruby red veins. Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium. It also contains sulforaphane, a chemical with potent anti-cancer properties.
