Sunchoke

Sometimes called the Jerusalem artichoke, the sunchoke is neither an artichoke, nor an import from Jerusalem. The sunchoke is a funky-looking root vegetable attached to a species of sunflower. Along with potatoes, sunchokes were one of the first American plants introduced to Europe. Though the potato became wildly popular, sunchokes have experienced a resurgence in recent years, showing up in grocery stores and farmer’s markets alike.
