Yacon

The Yacón is a plant traditionally grown in the Northern and Central Andes from Ecuador to Argentina for its crisp, sweet-tasting tuberous roots. The texture and flavor are very similar to jicama mainly differing in that yacon has some slightly sweet resinous and floral undertones to its flavor. Another name for the yacón is Peruvian ground apple. Yacon has high fiber and water content. Since the body does not metabolize the sugar found in yacon, yacon syrup is now a popular low-calorie alternative sweetener for diabetics, vegans and those cutting down on their sugar intake. Ya..
